<p>Distillation apparatus, 19th century cutaway artwork. This is the system developed by the French distiller Isaac Berard circa 1805. The liquid to be distilled was heated in a vat (left), with the vapours passing through a series of condensers (upper right). The distillate was collected in a cooling vat (lower right). In the early years of the 19th century, a great number of distillation patents were filed by French distillers and winemakers.
